It was a steal!

I typically grocery shop once a week with a shopping list so I don’t overspend or impulse buy.  Today I broke all my rules.  Following a Meal Prep Assistant appointment with a client, I stopped off at one of my favorite local-owned stores, Beiler’s Penn Dutch Market in Uniontown.  They always have fresh, low-priced produce, pantry staples and nuts.  Plus the variety of produce they carry is so much better than the mainstream stores.   My intentions were to go in for just two items…I should have known better.   However, today I came away with a steal, so I’m happy I broke my rules.

What was my grocery bill?   $25.05.  I got all this, including a few organics, for only $25.05!   Amazing!   I picked up items I use frequently and decided I’m going to be a bit crazy and just wing it this week.

Here’s what I decided to make using what I purchased and what I currently have in my refrigerator and pantry:

Kale and Sausage Soup with White Beans (www.simplyrecipes.com)

Acorn Stuffed Squash with Quinoa (www.marinmammacooks.com)

Balsamic Roasted Portobello Mushrooms with Blue Cheese (www.keystothecucina.com)

Zucchini Noodles with Pesto

Cauliflower Lentil Tacos in lettuce wraps (www.fatfreevegan.com)

Breakfast Baked Sweet Potatoes with Almond Butter, Banana & Chia  (www.ambitiouskitchen.com)

Roasted Purple Potatoes with Scrambled Eggs and Sausage

6 meals, 1 side dish and basic ingredients I will utilize for other meals or dishes.    My favorite part of this purchase was the organic grapefruits for $1.99 and acorn squash at $.29/lb.   Beiler’s is not consistent with organic produce, but when they do have it, the prices make me smile.

I can’t wait to start cooking!
