A simple, delicious and nutritious snack your kids can make.
2 cups quick oats
2 cups shredded coconut, unsweetened
1 1/2 cups peanut butter (or nut butter of your choice)
1/2 cup honey
1/2 cup sunflower seeds
1/2 cup mini chocolate chips
1 teaspoon vanilla extract
1/2 teaspoon salt
Directions:
In a large mixing bowl, add the oats, coconut, peanut butter and honey. Using a wooden spoon or rubber spatula, mix to combine. Add in sunflower seeds, mini chocolate chips, vanilla extract and salt. Mix until well combined.
Using your hands, grab a small handful of the mixture and squeeze together and being to form into a 1″ ball. It will be gooey and sticky. The firmer you can compact it, the better. Repeat until the entire mixture is used. Will make approximately 45 balls.
Refrigerate for 30 minutes. These store best in the refrigerator. You can freeze as well, especially if keeping some out of sight is less tempting by your little ones!
